Who says that you can't make the best of every situation... testing new ways to feed oneself can be exciting. I may have gone a little to the extreme (as some good friends told me) but I felt that I needed too. I chose a naturopathic therapy to fight the return of my colon cancer. My new diet is VEGAN and RAW and after the first month of just fruit and vegy juices... its time to reintroduce raw fruit and vegy solids...
The only exception during this month was a little snack... maybe not for everyone... Organic Garlic, Organic Extra Virgin Olive Oil and Organic Cayenne Pepper. You can also chop the garlic in small pieces, then mix it all together... and enjoy.
When I finally was ready for my first salad... Eileen prepared a nice mixture of fresh organic vegy: Eileen's Red Clover sprouts, Alfalfa sprouts, Tomatoes, Avocado, Green Onions, Broccoli, Red & Green Romaine, Red & Green Oak Leaf, Lollo Rosa, Tango, Baby Spinach, Red & Green Chard, Mizuna, Arugula, Frisee, Radicchio, Extra Virgin Olive Oil and Cayenne pepper.
How about a nice fruit salad, we have one to suggest: slices of organic Grapefruit, Oranges, Apples and Blueberry... I like Cayenne Pepper here too... but this can be personal preference ;-)
To add some flavor to the vegy we have found a nice dip recipe... "GREEN CHEESE" (non dairy cheese made from dried greens powder, mixed with Extra Virgin Olive Oil and Garlic, naturally all organic). You can also mix the Green Cheese with any fresh sprouts and add Cayenne Pepper and a little extra Extra Virgin Olive Oil, and make a great little snack.
Here is another great recipe... WILD RICE SALAD. The rice has to be sprouted first and this takes a couple of days. The uncooked rice is placed in a jar, soaked in distilled water for 10 hours, and then rinsed 2-4 times a day for 2-3 days. We need to sprout to release the enzyme inhibitors that are present in all grains, beans, seeds and nuts, that make them hard to digest. Here is the recipe: sprouted Wild Rice, Celery, Onion, Cherry Tomatoes, Green Onions. On top you add a dip made with Tomatoes. Garlic, Habanero Peppers, fresh Arrugula all blended together. The only draw back in this recipe is having to wait for the rice sprouting process.
Here is an alternative proposition to substitute cereal in the morning. First SPROUT MIXED ORGANIC GRAINS, then serve them covered with grated organic raw apple, garnish with orange slices and cover all with cinnamon.
In a raw Vegan life... without bread, the next best thing is a RAW CRACKER made with spouted mixed organic grains. You sprout the grains first... then make them into flower with a coffee grinder and the flour is afterward mixed with organic Extra Virgin Olive Oil, Italian Herbs, Coriander, Tamari Sauce, fine chopped Onions, Distilled Water and Celtic Salt. Place the mix in the dehydrator and let it dry for about 12 hours. The final result is a great cracker for your snacking attacks.
Who said that you can't have chips to nibble while watching a good movie ??? Please try these lovely raw CUCUMBER CHIPS. Slice a nice organic cucumber (we use the long English Cucumber because has fewer seeds and dries better) and place it a dehydrator. Add a drop or two of Tamari Sauce on each slice for flavor. Again here the drawback is the waiting time. The dehydration process takes a good 6-8 hours.
A nice lunch... RAW CRACKERS (see above) with raw SUNNY PATE (Sunflower seeds, Lemon juice, Scallions, raw Tahini, liquid Aminos, Red Onion, Parsley, Garlic, Cayenne Pepper, Ginger juice and Cumin) server with raw RED CLOVER SPROUTS covered with raw BASIC PATE (Sunflower seeds, Lemon juice, liquid Aminos and Garlic). What a great LUNCH.
A dinner recipe: CHILI RELLENOS. Raw Red Peppers stuffed with a raw SPECIAL PATE (Basic Pate, finely minced Carrots, minced Celery, minced Zucchini, minced Onion, thinly sliced Mushrooms, finely chopped Cilantro, pressed Garlic cloves, dried Oregano, Cayenne Pepper, Lemon juice and liquid Aminos). Once the peppers are stuffed they are dehydrated for 6-8 hours... and then are ready for your special dinner.
Pizza time with this KINDA-PIZZA. The dough is not exactly like you would expect... lets say is "kinda-raw". The crust is made with Buckwheat Groats soaked for 6 hours, and sprouted for 24 hours. Then you grind the sprouts in a food processor along with chopped Tomatoes, Sunflower meal, liquid Aminos, Extra Vergin Olive Oil, minced fresh Basil, minced Garlic, dried Oregano and then made into small round pizzas and dehydrated for 24 hours. The next day you are ready to add the toppings (SUNNY PATE, Tomatoes, Mushrooms, Greens, Basil, Onions) and serve.
A dinner with an oriental touch: SUNNY NORI ROLL-UPS. Ingredients: raw Nori sheet, SUNNY PATE (see above), sliced Green Olives, Wasabi, Sunflower sprouts, Red Clover sprouts, thin slices of Red Pepper and Carrots). Very nice rolls and very filling.
